Cobb Pasta Toss Sep 22, 2009

Ingredients:

Cobb Pasta Toss3 pints grape or cherry tomatoes
3 tablespoons extra virgin olive oil (EVOO), divided
salt and freshly ground black pepper
6 slices of bacon
1 pound whole wheat penne pasta
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
2 avocados, pitted and diced
1 lemon
2 cloves garlic, grated or finely chopped
a few dashed of hot sauce
4-5 scallions, thinly sliced on the bias
1 cup blue cheese crumbles
¼ cup fresh basil (about a handful), chopped
¼ cup flat leaf parsley (about a handful), chopped

Prep:

Pre-heat the oven to 400 degrees. Place a large pot of salted water over high heat to boil.

Scatter the tomatoes onto a baking sheet and drizzle with about 2 tablespoons EVOO and some salt and pepper. Toss lightly to coat and roast the tomatoes in the hot oven until they burst open and are tender, about 12-15 minutes.

Place the bacon on a broiler pan and transfer to the oven along with the tomatoes. Cook until crispy, about 15 minutes.

While the tomatoes and bacon are in the oven, drop the pasta in the boiling water and cook to al dente, according to package directions. When the pasta is ready, reserve a large mug of the starchy cooking water, then drain the pasta and return it to the pot it was cooked in.

While the pasta is cooking, season the chicken pieces with salt and freshly ground pepper. Heat a large skillet with one turn of the pan of EVOO, about 1 tbsp, then add the chicken and sauté until golden brown and cooked through, about 6 minutes.

While the chicken is cooking, scoop the avocado flesh into a small bowl and squeeze the juice of the lemon over it, tossing to coat.

When the chicken is finished cooking, add the garlic to the pan, cook for 1 minute, then sprinkle in a few dashed of hot sauce and toss to coat.

In a large serving bowl, mash the cooked tomatoes together with the scallions, then add the reserved pasta water and pasta.

Top the pasta and tomatoes with the chicken, then crumble the cooked bacon over it and toss with the avocado, blue cheese, basil, and parsley.

Serves 4.

Mama’s Meatloaf Sep 16, 2009

MeatloafIngredients:

3 lbs. Lean ground beef (or turkey)
½ onion
1 egg
1 packet dry Lipton onion soup mix
2 cups crushed Zesta crackers
½ cup ketchup

Combine all ingredients with bare hands. Make sure everything is mixed well. Form into a loaf. Ice top with ketchup. Cover without touching top of loaf. Bake for at least 1 hour at 350 degrees. Uncover for last 10 minutes of cook time. Enjoy!

Other ideas:
You can prepare the recipe and instead of forming it into a loaf, make meatballs! Bake at 350 degrees for ½ hour. Serve with whole wheat pasta and your favorite marinara sauce.

Orange Roughy Sep 10, 2009

Orange Roughy½ pound orange roughy
garlic powder, to taste
fresh cracked black pepper, to taste
½ lemon, sliced very thinly
2 thin slices sweet onion
1 teaspoon capers
1 tablespoon light margarine or butter, thinly sliced
optional: tarter sauce

Preheat oven to 350 degrees.
On a baking sheet, place a large piece of aluminum foil. Place fish in center of foil. Sprinkle garlic powder and fresh cracked black pepper over fillet.
Top fillet with 4 – 5 lemon slices, pats of butter, and onion.
Sprinkle capers over onions.
Wrap prepared fish in the foil, bringing ends of foil together and folding to seal.
Place the baking sheet in oven and bake for 20 minutes.

Serve with fresh lemon wedges or tater sauce.

Roasted Garlic and Chicken Double Dumpling Stoup Sep 10, 2009

Mini meatballs are cooked in the stoup, as dumplings. Then gnocchi (potato dumplings) are added, doubling the dumpling factor.
Garlic and Chicken Double Dumpling StoupIngredients:

2 Tbsp extra virgin olive oil (EVOO), plus additional for drizzling
4 ribs celery from the heart, chopped
1 large onion, chopped
3 carrots, shredded
salt and pepper
1 can crushed tomatoes
¾ pound ground chicken
1 egg
½ cup Italian breadcrumbs (a couple of handfuls)
¼ cup grated Parmigiano Reggiano cheese (a handful)
2 tablespoons vegetable oil
1 package gnocchi (available in refrigerated aisle with fresh pastas)

Prep:

Preheat oven to 400 degrees.

Take the head of garlic and chop just enough off the top to expose the cloves. Drizzle with EVOO, wrap it in tin foil and bake for about 45 minutes to an hour.

Meanwhile, heat a soup pot over medium to medium-high heat with 2 tablespoons EVOO. Add celery, onion, carrots, season with salt and pepper, and cook 5 minutes. Add crushed tomatoes and 4 cups water to the pot, cover and bring to a boil.

Remove garlic from oven and squeeze the roasted cloves out into the bowl of a food processor. Add 1 to 11/2 cups of soup and puree till smooth. Add garlic broth back to the stoup and cook for 5 minutes.

Place ground chicken ina bowl and season with salt and pepper. Add egg, breadcrumbs and cheese. Combine the chicken mixture with your hands then roll into walnut-sized meatballs. Heat a medium skillet over medium-high heat with the vegetable oil and brown the neatballs. Add the browned meatballs to the soup and cook for 10 minutes.

Wash up, then add the gnocchi to the pot and cook for 5 minutes more. Turn the heat off under the stoup and let cool for 5 minutes on the stovetop before serving.
