Citrus Broiled Alaska Salmon Jul 29, 2009

INGREDIENTS

citrus salmon

Citrus Broiled Salmon

4 large oranges
8 (4 ounce) fillets salmon
2 teaspoons red wine vinegar
1/2 cup chopped green onions
2 teaspoons cracked black pepper
 

DIRECTIONS

Preheat the oven’s broiler.
Slice, peel, and pith oranges; slice crosswise into 1/4 inch rounds. Season fillets with salt. Place salmon fillets on broiling pan.
Place the pan of fillets 4 to 6 inches from heat. Cook for 15 minutes under the preheated broiler, or 10 minutes per inch of thickness. Remove from broiler just before they are cooked through. Sprinkle with vinegar. Arrange orange rounds on top. Sprinkle with green onions and cracked black pepper. Broil 1 minute longer.

My New Favorite Fruit-To-Go – Organic Mashups Jul 27, 2009

So, as I’m perusing through the isles of Toys R Us, I spot something that catches my eye.  I’m always looking for the newest, yet still simplest, way to incorporate healthy foods into my kids mashups_maindiet.  Out jumps Organic Mashups Squeezable Fruit.  These 3 oz. “juice pack” looking things, with a twist off top are packed with organic fruit purees, actually made from real fruit purees!!  Usually these kinds of items look great, but when I check out the ingredients, they are blends of fruit concentrates and high fructose corn syrup.  Not these!  I was also very impressed with the variety of fruits used—pear, mango, strawberry, blackberry, blueberry, banana, and the always faithful grape and apple.  They have an “our never evers…” section on the label touting how they never ever use trans fats, high fructose corn syrup, or artificial ingredients.  All the fruits are certified organic, pureed and packaged without preservatives or any additives.  What you see is what you get.  They taste great, are ultra convenient, and perfect for lunches or on-the-go moms looking for a healthy alternative to packing the actual fruits themselves.

HOW MUCH WATER DO I NEED Jul 24, 2009

Summer is now here along with hot temperatures, cookouts, and other daylong activities.  A common trap we all fall into during this beautiful time of year is not staying properly hydrated.  Around 400 people a year in the United States die from heat stroke and the majority of them were not doing physically strenuous activities.  Heat stroke occurs when the body is unable to regulate its temperature. The body’s temperature rises rapidly, the sweating mechanism fails, and the body is unable to cool down.  If you suffer from other illnesses, you have a greater chance of having a heat stroke in high temperatures. Here are some tips to beat the heat:
water glass• Drink a quart of water per hour
• Avoid caffeine and alcohol
• Use sunscreen
• Wear loose clothing light colors and fabrics
• Don’t overexert yourself

Most athletes are told to shoot for at least one gallon of water per day.  In warmer climates, athletes should also consume a strong electrolyte drink during and after training like Gatorade or one of my favorites Cytomax from Cytosport.  Remember that water is the best source for your daily fluid needs. Other good beverages include milk, herbal teas, low-sodium broth, 100% fruit and vegetable juices. Soft drinks will also count toward your daily total of fluid, just remember that sugar sweetened soft drinks and fruit juices add extra calories to you daily diet that you don’t need.

Nicotine being linked to the early onset of Prediabetes Jul 23, 2009

Non-SmokingResearch has shown that the nicotine in cigarette smoke may advance insulin resistance and lead to a condition known as Prediabetes.
These findings could clarify why smokers are at higher risk for diabetes than non-smokers. The same team of scientists was able to partially repeal nicotine’s effect on insulin on animal test subjects, by giving mice the nicotine-blunting drug mecamylamine.
One of the researchers, whom wanted to keep their anonymity, noted that although smokers tend to lose weight which can  help prevent heart disease, but not in all cases, still face a higher risk of being affected by diabetes.

 
Prior studies have revealed that smokers have a tendency to be more insulin-resistant, which leads to elevated blood-sugar levels. Some other studies have suggested that the key factor at work was nicotine’s effect on the stress hormone cortisol, since cortisol overload is known to induce insulin resistance over time.
In their study, the team of researchers gave adult mice injections of nicotine twice daily for 14 days. The mice displayed high levels of cortisol in their blood. They also began to eat less and lost some weight compared to mice that did not receive the shots, but nonetheless developed insulin resistance and prediabetes.
Researchers noted that after treating the mice with the nicotine-agonist drug mecamylamine, it blocked this process only somewhat. The results suggested that reducing tissue levels or decreasing insulin resistance may decrease heart disease seen in smokers. The researchers anticipate the in the future there will be drugs available to specifically block the effect of nicotine on tissue levels and insulin resistance.

Spicy Roasted Edamame Jul 22, 2009

Ingredients:Spicy Roasted Edamame

1 1/4  cup frozen adamame, thawed and shelled
2 teaspoons olive oil
½  teaspoon chili powder
¼  teaspoon dried basil
¼  teaspoon onion powder
¼  teaspoon ground cumin
¼  teaspoon paprika
¼  teaspoon ground black pepper
½  teaspoon sea salt

Directions:

1. Preheat oven to 375 degrees F (190 degrees C).
2. Place the thawed, drained edamame into a mixing bowl, drizzle with the olive oil, then sprinkle with chili powder, basil, onion powder, cumin, paprika, pepper and salt. Toss until the edamame are evenly coated with the oil and spices. Spread into a 9×13 inch glass baking dish in a single layer.
3. Bake uncovered in the preheated oven until the beans begin to brown, 12 to 15 minutes. Stir once halfway through cooking.

Low Fat Southwestern Burgers Jul 17, 2009

Southwestern Burger

Southwestern Burger

Ingredients:
1 cup reduced-sodium black beans, rinsed
1/3 cup minced red onion
1 jalapeno pepper, seeded and finely chopped
3 tsp ground cumin
1 pound extra-lean ground beef
1/3 cup tomato sauce
1 egg white

Preparation:
In a small bowl, mash black beans with a fork. Add onion, jalapeno pepper and cumin. Mix well. Place ground beef in a large bowl, followed by the bean mixture. Add sauce and egg white. Blend well with a fork.
Form into four 3/4-inch patties.

Broil or grill for 5-6 per side until internal temperature reaches 160 degrees.
